Roman vs. Neapolitan

Here at Pizzicotto, we opted for the Roman style of pizza as opposed to Neopolitan style because the former better suits how we love to serve; firstly, by YOU analysing the pizza tray selection, choosing an individual slice, watching it be cut by a member of our team... to then eat it fresh and hot.
Pizzicotto pizza trays come in many variations - one may contain the classic margharita flavour, another... with toppings of seasonal vegetables, another may be richer with a selection of our cheeses, or contain cured meat or seasonal truffle. Take your pick!

Crucially, the central element of our pizza is in the sourdough. We strongly believe that Roman pizza shape and texture makes it more practical without losing the feeling of tasting freshly baked. Roman-style pizza al taglio requires a distinctive solid structure: light enough to be airy, strong enough to withhold toppings, and crisp enough to give a satisfying bite from the base and edges. Achieving this balance is not a matter of shortcuts. It begins with a sourdough that ferments, developing both flavour and strength in our signature Romani base.
Signature Pizzicotto slices can be eaten at the counter, carried down Sukhumvit, shared at home, or brought to a friend or loved one via our 100% recyclable takeaway boxes.
